Recipe Tuesday - Campfire Bananas

One of the things that I like to do for my husband and I is find good, healthy snacks that are different than the cookies and milk that we have almost more often than we should. I fell in love with this easy recipe the other night.

Campfire Bananas

Two large bananas - still in the casing
60 mini-semi-sweet chocolate chips (30 for each banana)
30 mini marshmallows (15 for each banana)
Tin Foil


Preheat oven to 450 degree F
Cut into the banana length wise, as deep as possible without cutting all the way through the other side of the banana.
Open the cut with your thumbs
Put in 15 chocolate chips into each banana slice
Put marshmallows over the chocolate chips
Add the rest of the chocolate chips over the marshmallows
Wrap each banana in tin foil
Place on cookie tray and into the oven for 10-20 minutes (depending on how hot you want the banana)
Open tin foil and put on plate and serve

The best part about this snack is that it is only 199 calories. That it is. The recipe usually states that the tinfoil wrapped bananas can go on the grill or in the campfire, but the oven is perfect for all of us apartment bound eaters!

Anime Monday - Ouran High School Host Club

This is an anime that I watch, re-watch, watching again, subbed, dubbed, English, French, Spanish, Japanese, you can give it to me any way, I will watch it (pun intended).

It is about a person (girl.boy.thing.it you find out in the first episode) that falls into a group of boys that play in a Host Club, which attends to very wealthy girls. Not fitting in or not wanting to fit in make Haruhi fit in perfectly with the Host Club. Each character is perfect in the roll that they play, not only in the anime, but in the Host Club as well. Partially a love story, partially a coming of age story, completely a story of friendship, growing up and learning who you really are and who your true friends are makes this anime my favorite go-to anime.

Recipe Tuesday - Orange Juice Chicken

Fun, easy simple and I usually have all the ingredients in my kitchen.

Ingredients

Boneless Chicken Breasts (4)
2 Tbs of mustard (I like regular, although dijon-style is recommended)
1/2 cup chopped onion
1/2 brown sugar, divided into two equal portions
2 cups of orange juice
2 tbs butter
2 tbs flour

Instructions

  1. Preheat the oven to 375 degrees
  2. Place chicken into a 9X13 baking dish
  3. Spread mustard over the chicken. 
  4. Coat lightly with 1 portion of the brown sugar & add the chopped onion
  5. Pour orange juice into the dish to cover the chicken. 
  6. Add butter to the top of the chicken.
  7. Bake for 45 minutes, remove leftover sauce from the dish into a saucepan.
  8. Sprinkle the rest of the brown sugar over the chicken and return to the oven.
  9. Whisk flour into the juice in the sauce pan. Add any leftover orange juice. Heat on high until the sauce is thick. 
  10. Remove chicken from the oven, place on a serving dish.
  11. Serve sauce over the chicken or in a gravy boat
  12. Serve

Random Weekend - Fridays are off

For some reason I always tend to just crash on a Friday. After a long week of work, I will come home, cook dinner and fall asleep before midnight, which is really rare for me. Last night, I was actually asleep before 10pm, which is even more rare. I am not sure if it is because I am just drained or whatnot, but my body just crashes. I work on a few things (headbands, Minecraft world, Pokemon training), watch Ghost Adventures, and then I fall asleep. It is a interesting concept since I am suffered from insomnia since the car accident in 2004. There are night when I cannot sleep and I am up on the couch for hours. My 3DS and laptop are my best friends at that time. So I have learned that my Friday nights are not times that I am writing a blog. It gives me the chance to spend time with my husband, cook, and sleep. Saturdays, I sleep in, play games and just work on what I want to work on. Seems like a good plan. I like this plan.

Drinks Thursday - For Love of Fire (or Lava)

One of the things that keeps popping up in my relationship is the word fire. My hubby is obsessed with it. I rank just above fire but still below the Mustang and the computer. One of the drinks that I used to love back in the day was a Fire Rush, or commonly known as the Lava Flow.

Ingredients

1oz White Rum
1oz Malibu
2 oz Pineapple Juice
2 oz coconut cream
2 oz of strawberrys
1 banana

  1. Mix together the 2 rums & strawberries in the blender. Pour into glass
  2. Mix together the pineapple juice, coconut cream & banana with ice. Blend until smooth
  3. Pour banana mixture into the strawberry mixture and watch the magic happen.
